This super green veggie dish is a dense green veggie powerhouse with sprouts, green beans, broccoli, coriander and mint, sidelined with a miso tahini and ginger dressing.
I love this awesome veggie combination by itself for lunch or you can have it as a side to a larger meal. Don’t cook them for too long to maintain the crunch. Sprinkled with some of my spicy trail mix.
Why its good for you:
Sprouts and broccoli are members of the brassica family, they are nutrient rich with Vitamin A, C, K and folic acid (vit B’s), potassium, copper and iron, great for bones, skin and eye health too. (N.B. Do not each too much if you have a thyroid related problem) This dish is also high in dietary fibre and low in GI because of the beans. This dish is also high in vitamin C thanks to the fresh mint, coriander and lemon. The tahini dressing is originally from sesame seeds, this is one of the richest sources of calcium (good for bones), ginger for immunity. All of the greens are alkalinising on the body which is the best environment to function.
Its simple, quick and a great meatless dish.
1 Tbsp coconut oil
1/2 Red Onion, diced
4-5 Brussels sprouts, washed ends chopped and quartered
20 Green beans, topped & tailed
1/2 Broccoli, florets, cut into small florets
1 Sml zucchini, finely sliced lengthways
1 Sml Lebanese cucumber, finely sliced lengthways
1/2 Lemon, squeezed
Handful fresh mint leaves, washed & torn
Handful coriander leaves, washed & torn
For the dressing:
1 Tbsp unhulled tahini
1 Heaped tsp miso paste
1/2 Lemon, squeezed
1 Tbsp sesame oil
1 Thumb raw ginger, finely grated
Spicy trail mix or raw pumpkin seeds, scattered
- In a large frying pan, melt the coconut oil over a medium/high heat. Once melted, add the onion and let it sweat for 3-5 minutes until soft and fragrant.
- During this time make the dressing by adding the tahini, miso paste, 1/2 lemon, sesame oil and ginger into a bowl or mug and mix well until all absorbed, season to taste with sea salt and pepper if needed.
- Add sprouts and green beans, let them sweat for around 6 minutes (we still want everything crunchy) Add broccoli, zucchini and fry for a further 3-5 minutes.
- Take off heat add cucumber and squeeze the other half of lemon over the pan, add mint and coriander, toss, sprinkle with seed mix and serve with the miso dressing.
