My supercharged breakkie bowl is a sublime balance of awesome flavours. Sautéed red onion, grated zucchini with smokey paprika and finely grated parmesan topped with raw baby spinach, oven roasted tomatoes and topped with basil.
Guaranteed to give you the fix for the day. It doesn’t take too long to make, 20 minutes maximum! but if you are time-hungry try it on the weekend for brunch.
It is great to get you boosted full of some of your 5-a-day first thing in the morning. Raw onion is more beneficial to you health wise, but I love mine sautèed to take the edge off. Zucchini is high in fibre that can help reduce ‘bad cholesterol’ being absorbed into your bloody stream, if you lightly fry it, it will eliminate nutrient loss. Raw baby spinach contains some valuable nutrients and I would be adding this to lots of different meals, 1/2 cup of raw spinach provides the daily intake of vitamin A (good for your eyes an also an antioxidant), potassium as well as vitamin C and vitamin b6 (helping your body unlock the energy from food). Roasted tomatoes contain caretenoids a higher level of lycopene (which helps reduce the risk of cancer by removing damaging free radicals).

2 Vine Ripe Tomatoes, halved
1 Tsp Coconut Oil
1 Red Onion, finely diced
1 Zucchini/Courgette, grated
1/2 Tsp Smoked Paprika
20g Parmesan, finely grated
1/2 Cup Raw Baby Spinach
3-4 Basil Leaves, torn
Sea Salt & Pepper
- Pre-heat oven to 180c. In a small baking/roasting tray add tomatoes facing up. Sprinkle with salt, pepper, 1/4 teaspoon of coconut oil on each one. Pop in the oven for 20 minutes until soft and charred.
- Whilst toms are roasting, grab a small frying pan, over a medium heat add 1 tsp coconut oil. When hot add onions and let them lightly fry for 5-7 minutes before add the zucchini and smoked paprika. Let it heat through for 1-2 minutes. Take off the heat and add the parmesan, stir in well.
- Tomatoes should be done, load up plate with zucchini/onion mix, followed by spinach, tomatoes then basil on top. Sea salt and pepper to season or try some of my homemade dukkah.
