Sometimes a superfood vegan brunch bowl is just what the doctor ordered on a Saturday morning. A satisfying and guilt-free detox breakfast bowl of goodness.
You can literally add anything to the bowl. I went for some delicious starfruit, kiwi, goji berries, peach, passionfruit, banana, chia seeds and coconut yoghurt sprinkled with some fresh mint.
Guaranteed to add some punch and energy into your day…and to put a smile on your face!
*soak the chia seeds the night before so they are all ready for the morning.
1 Banana, sliced
1 Starfruit, finely sliced
1 Kiwi Fruit, finely sliced
1 Passionfruit, halved
2 Tbsp Coconut Yoghurt
1/4 Cup Chia Seeds
3/4 Cup Almond Milk
1 Tbsp Goji Berries
4-5 Mint Leaves
1. Grab yourself a whizz stick and half of the banana and blitz it with the almond milk. Add it to the chia seeds. Mix together and pop in the fridge overnight. This will let the chia seeds absorb the banana/almond milk combo.
2. Get a large bowl. Add the coconut yoghurt, chia seeds, then the rest of the banana, starfruit, peach, kiwi fruit, goji’s and sprinkled with mint leaves. Serve with passionfruit halves on top.
