What a weekend we have just had! Oh my lordy it was a scorcher, I am heavily relieved for this cooler change today. I wanted to share with you something I whipped up for a group of mates over the weekend. It is of course in true By Rosie’s ethos, simple, thrifty and a great addition to any BBQ.
Sweet chilli marinated chicken thighs skewered with capsicum, BBQ’d then served with a bunch of fresh greens (I chose coriander for its healing purposes and help with chelating oxidising free radicals caused through charred meat!) added some extra grilled lemon and eggplant served up in a pita bread wrap drizzled in a tasty siracha sauce. I decided to make my sweet chilli marinade from scratch but if you don’t mind you can actually just use the store bought stuff to save time.
This is a really great dish to bring out to the table any night of the week. You can throw it together in less than 10 minutes and have it cooked in 30mins. A win win all round, serve with a big salad, I like this eggplant and halloumi one, fig one or summery salad are perfect side kicks to this dish. Add a couple of roasted sweet potatoes in there too.
Why is this dish good for you:
Organic chicken will guarantee you the best protein with all of the essential amino acids which will nourish, replenish and repair tissue, skin and muscles. Organic entails that the chicken has none of the added hormones, antibiotics and so on, which have been known to disrupt our own hormones.
Capsicum contains the highest level of vitamin c in its raw state, when cooked it looses this a little but still maintains fibre which will help with digestion.
Eggplants are a superb source of folate (this can help treat low iron in your blood), fibre (which is great for all sorts of digestion) and some magnesium which is great for sleep as well as helping repair your tissue and muscle fibres.
