My sweet potato fritters with runny poached eggs and wilted english spinach might seem like a complicated breakfast dish to make, but I promise you it wont take more than a simple 20 minutes to throw together, the results are fabulous and having fritters are a great alternative to toast in the morning. Try mixing your breakfast routine up with this combination, even if it is for the weekend. A meaty vegetarian breakkie to get you kickstarted for the day and help you conquer almost anything before lunch. Goes swimmingly well with my homemade tomato ketchup (sauce) dolloped on the side.
Why it is good for you:
As we know because of the colour of sweet potato they are high in the antioxidant beta carotene, the goodies lie close to the skin, so be sure to keep the skin in tact, if you don’y buy organic fruit and veggies, ensure that they are washed well in apple cider vinegar to help rid of some of the pesticides. Sweet potatoes are also high in vitamin C, low GI (slow release energy), vitamin A for your eyes and skin, glutathione will also help beat infection and boost immunity. High in potassium which is a good mineral for heart health. Eggs are full of essential amino acids, helping heal skin and repair tissue. Spinach is a lovely leafy green packed with folate (fibre) for digestion, vitamins A, C and B6 and potassium great for eye health, low iron (anaemia) and bone health.
