Some of you maybe asking “what the heck is teff?”, well these were the exact same questions that I was asking a few months ago. My mum introduced me to the stuff and I thought that I would do the same for you.
It’s native home is Ethiopia who have been using this amazing ancient grain for centuries. It has only just begun drip-feeding it’s superfood goodness through health food shops and supermarket shelves throughout the world. It is not very easy to get your hands on. However, for you Aussie’s now available in Coles Supermarket. For other parts of the world, trying buying it online here in the UK or here in the USA.
Teff’s tiny seeds are the size of poppy seeds and packed to the rafters with some serious nutritional punch. A nutty flavour that can be added to breads, porridges, salads and so forth. This stuff is wondrous and thought to be the new ‘quinoa’. Here are a few facts before I get to my very simple first of many ‘teff’ recipes.

- A brilliant versatile ingredient that can be used and incorporated in many gluten free recipes.
My Teff Date Energy Balls are a fantastic on-the-go breakfast, mid morning smoko snack or mid afternoon pick-me-up. Full off nutritional goodness, simple and cheap to make.
Makes 6 walnut-sized balls
1/4 Cup Teff
3/4 Cup Water
10 Dates, roughly chopped
Pour grains into small sauce pan, add the water. On a medium heat slowly boil down grains until gooey consistency and all water has been absorbed. Take off the heat and be careful not to burn. Add the dates and mix through.
The mixture should be dry enough to roll into walnut-sized balls.
Store in a seal-proof box and pop in the fridge until you want your grab-and-go breakfast.
