I developed this flavoursome recipe over the wet and windy weekend we have just endured here in Sydney. Although it is best served cold, I heated the dish up with a little extra chilli. There are so many things that I love about this recipe, its flavours, textures and freshness.
The chicken breast was poached in coconut milk, turmeric, salt and pepper, then leaved too cool in its own sauce, it was then shredded and scattered over spiralised cucumber and finely chopped red cabbage, a squeeze of lime and some fresh chilli, finished off with the left over coconut sauce.
A scrumptious and nourishing light lunch or dinner designed to be thrifty with only a handful of ingredients.

This magnificent dish is glittering with the good stuff. The chicken offers a good douse of protein with all the essential amino acids which are great for muscle repair and boosting your immunity. Turmeric is probably the worlds best spice, the uses are bountiful, from aiding with digestion to fighting off infection and inflammation, it is rich in manganese, zinc, the B group vitamins and iron. Cucumber is great for your skin and excess sweating, red cabbage is brilliant for digestion. Chilli is brilliant for immunity to help fight off those lurking sniffles (I am currently doing that the moment!) All of the greens have a wonderful alkalinising detoxifying effect on the body, which will help it work at peak performance as well as heal yourself.
