I absolutely love scrammy (scrambled) eggs on sourdough toast in the morning. I thought I would jujj up this family favourite, add some turmeric spice into the mix and some pan fried vine ripe tomatoes, sprinkle in some fresh basil leaves from the garden and you have a triumphant plate of goodness.
The results were superb and will most definitely be on my breakkie rotation.
If you like to follow my instagram you will know that I love to mix up my breakfast routine. If I could put it into context, having the exact same breakkie everyday is like wearing the same bright blue jumper everyday for 365 days of the year, you get bored of it…right! Same with your body having the same ingredients, day in day out. Mix it up and make it exciting, your body will really appreciate the change and your health goals might be improved more quickly.
My homemade seedy bread would go really well with this dish too, I just had some delicious organic sourdough to hand.
Why is this little number good for you:
Turmeric’s active ingredient curcumin (activated by a pinch of pepper (cayenne pepper)) has a list of benefits from anti-inflammatory, anti-microbial, anti-bacterial, anti-fungal and a blood purifier. It helps us digest food by aiding the pancreas to release pancreatic lipase (digestive enzyme).
Panfried tomatoes are high in lycopene (this is the active ingredient) which is a powerful antioxidant and research is still showing that it can aid in prostate cancer.
Organic and free range eggs are a full protein that contain all essential amino acids, ideal to help your body replenish, nourish and heal your skin, tissues and muscles.
Hope you enjoy this breakkie mix up.
