I whipped together a warm winter spiced & roasted cauliflower, green french lentil, lambs lettuce and finished off with fresh endive (witlof), crumbled feta and drizzled in a simple honey & wholegrain mustard dressing. This is a great dish warm or cold.
One to make in the evening then have the leftovers for lunch the next day. Not only is it scrumptious it is a powerhouse of nutrition and a exceptionally simple & easy dish to make in Summer or Winter. Sideline this dish with a Summer BBQ or a Weekend roast.
Why it is good for you:
Endive (witlof) have a slightly bitter taste but they are great additions to any salad, they are good for liver function and digestion. Lambs lettuce looks like lots of mini lettuces, its got a soft nutty flavour, I also like adding it to smoothies, it provides a good fibre for digestion and vitamin c for immunity. Cauliflower is rich in sulphur which helps work as an anti-inflammatory, it is also great to aid digestion and boost immunity. Puy green lentils are firmer and stick to their shape compared to the other red varieties. They are great for salads and don’t go mushy. Not only do they have a low GI, which helps sustain energy levels, they are also a good protein source and high in fibre aiding digestion. Perfect for vegetarians when consuming these alongside leafy greens to get your essential amino acids.
