1 White Onion, finely chopped
3 Zucchinis, coarsely grated
3 Garlic Cloves, crushed
3 Tbsp Greek Yoghurt
Lg Handful Spinach Leaves
1 Lemon, Squeezed
3 or 4 Slices Smoked Salmon, finely chopped
1 Handful Parmesan Cheese, finely grated
Sprinkling Parsley, roughly chopped
Salt & Pepper to Season
1. Grate the zucchini, I used a food processor with a coarse chip size option to quicken up the process, but works just as well with a hand held grater.
2. In a large frying pan, medium heat, add a dash of olive oil, add onions, garlic and cook until softened.
3. Add zucchini and heat through for 5 minutes. Then add half of the lemon juice & spinach leaves and cook for a couple more minutes. Take off the heat and sit for 30 seconds then add the greek yoghurt and the other half of the lemon juice.
4. Season with salt and pepper to taste. Sprinkle the salmon on and parsley and serve with an extra squeeze of lemon juice and small dollop of greek yoghurt, sprinkling of parmesan.
